Cheese of the Month & Fine Wine

Our amazing Fine Wine of the Month Club is now offering a Cheese of the Month as well!!! Amazing Artisan Farmstead Cheeses made on a dairy farm in central Minnesota. Cheese and wine are the perfect partners. Just like chocolate and peanut butter or peanut butter and jelly. You can’t have one without the other. Why would you want to?!

I am fairly certain I was a mouse or a rat in a previous life.  I have never meant a cheese I didn’t like.  Even as a small child I loved cheese; even the “stinky” ones like roquefort, blue cheese or gorgonzola.  This may be because my father’s favorite salad dressing was blue cheese.  But, I still love them even today.  I am so excited about the cheese addition to the Fine Wine Club.

Glorious Cheese

The founder and head cheese-maker gains her (yes, I said her) inspiration from the traditional European cow milk cheeses such as brie, cloth-bound cheddar,  and so many more.  To make good cheese you must know good cheese.  This is the firm belief of this amazing cheese-maker.  And, making good cheese is an art form.  The techniques, the recipes, the environment, and the people all work together to make the amazing cheeses available from this Cheese of the Month Club.

Cheese Tasting Notes…

Here are a few tasting notes for some of the fantastic cheeses you may receive with this fabulous Cheese of the Month Club.   

Lucky Linda Cloth-bound Cheddar:

Right now 10-lb wheels of this amazing cheese are aging in the cheese caves under the cheese shop located on the Minnesota-dairy farm.  These wheels will age for at least 6 months in these under ground caves.  This aging process results in a cheddar cheese that is smooth, savory, and not like anything you have ever tasted.   During the aging process, pressing each 10-lb wheel ensures uniform taste, texture and consistency.  Then each wheel is hand wrapped in muslin cloth.  Thus, allowing the natural molds found in the air to grow on the surface of the cheese; creating a unique look and flavor.  The final production is an award-winning, robust, full-bodied cheddar that pairs amazingly well with a dark ale.   Savor the incredible chocolatey, nutty, and earthy flavors all at once.

Little Lucy Brie:

This brie is a soft-ripened, bloomy-rind cow cheese that has a bright curd and white button mushroom flavor.  This smooth and creamy little wheel of brie cheese is perfect for two or three people to enjoy together.  Grill it, bake it, or simply enjoy at room temperature.  This cheese continues to ripen and get creamier as it ages.   If your tastes run toward a more grassy, light mouth feel, enjoy this brie while it is young.  If your tastes lean more toward a more “stinky” and creamy, let the little wheel of brie ripen in the fridge for a little while before you enjoy!!!  Remember, allow this little wheel of brie to come to room temp before you partake so it is spreadable.  A perfect topping for a baguette.  Pair it with some chardonnay and enjoy!!!

St. Anthony:

The St. Anthony cheese is the most heavenly accident.  While making a Lucky Linda Clothbound Cheddar, there was a glitch in the process.  Adjustments were made, and the aging process continued.  However, it was thought the batch would be a waste.  Two months later, after sampling the the mystery cheese,  we fell in love.  The mystery cheese is now known as St. Anthony, the Patron Saint of lost things.   St. Anthony cheese provides meaty undertones with hints of cured salami and fresh buttermilk.  This juvenile, washed-rind cheese will leave you begging for more!!   

An Outrageously Good Event!!!

Make your next event outrageously good with these amazing cheeses.  Our cheeses are perfect for holiday gatherings, meeting, reunions, or anytime you need to, “just bring something to share.”  Pair them with dried fruits, nuts, cured meats, and something pickled.  Add some bread or crackers, and voila; perfection!!
